Pressing Issues

Yesterday, we trekked through the wilds of Pomfret to squeeze the juice from a whole bunch of apples. (See what I did with that header? Pressing Issues?!! Get it???)

Though I value my extremities too much to get near a machine designed to pulverize and squish, the menfolk found the whole shebang terribly exciting and quickly developed a new language that sounded like, “Shorten the hydraulic and flatten the apple bladder, layer up the slats, the mash is ready, so open the valve, bashimba!”

You may be a trifle disconcerted to know that when your juice line clogs, the universally approved method for unclogging is simply to suck on the line until the juice flows again.  Very sterile stuff, this.  Messy too.  Here’s one of the intrepid pressers, the good Dr. Mark Knott, pleasantly spattered with mash.

Danger and contamination aside, the results of our (ahem, their) efforts were gorgeous and delicious.

Fresh cider was the perfect ending to a lovely fall day in Vermont.

Busy

We’ve been having lots of fun here at the Blue Horse Inn.  On the February 10th, we held our second annual event with the Green Mountain Horse Association and Morgan Stanley.

Last Wednesday, we hosted a mixer with the Woodstock Chamber of Commerce, which was so packed with local folks that I forgot to take a single photo. On Sunday evening, we had a delicious wine tasting with Rafael Flores from Artisanal Cellars and Jed Cohan from Delicata Catering.  Per Alessandra + Pork Polpettes = YUM.

After all that excitement, we were a little sleepy.

Between naps and events, we got to hang out with our truly lovely guests; one guest even helped us lively up our snow-covered front yard.

What’s Baking at the Blue Horse Inn

It’s been chilly here in Woodstock.

And when it’s chilly, we take the only sensible approach to keeping warm – making cookies.

We also have tasty and warming beverages made with elderflower syrup, but that’s a story for another time.

Tonight, we made Smitten Kitchen‘s Crisp Salted Oatmeal & White Chocolate Cookies.  I’m not normally one to toot my own horn (forgive me, I’m from Georgia), but these cookies are fantastically, wildly, profoundly delicious.  And I don’t even like white chocolate.

And these cookies have a wee touch of white chocolate.  The merest hint.  But it’s the salt that makes the magic.  Trust me.

We’ll be baking and sharing more goodies from the Blue Horse in good time for holiday festivities.  Meanwhile, do make these and enjoy.  You deserve all manner of warm and toothsome treats.

Autumn Wine Tasting

On Monday evening, we hosted our first wine tasting.

Colleen Pitcher from Vermont Wine Merchants and Daniel Burgio from Domaine Select Wines guided everyone through the vino.

We featured eight extraordinary Italian varietals.  Many are on our wine list, so be sure to try one or two on your next visit.

Our delightful and talented guest chef, Eric Garulay, paired each wine with a beautifully complimentary dish.

With the Velenosi Passerina Brut, we had shrimp mousse tartlets and oysters.

Pumpkin ravioli in browned butter and duck proscuitto on honey-drizzled chèvre paired with the COS Rami and the Velenosi Lacrima di Morro.

Pancetta leek quiches, bruschetta arrabbiata, lamb with carrot tahini and feta herb souffles accompanied J. Hofstatter Pinot Grigio, COS Frappato, COS Cerasuolo di Vittoria, and Velenosi II Brecciarolo Rosso Piceno Superior, respectively.

One of the night’s most triumphant pairings was the house-made dark chocolate marzipan truffles with the Velenosi Vino Di Visciole.  Unfortunately, the pairing was so delicious that your photographer had to put down her camera to enjoy it properly.

We had a lovely crowd – local folk and guests alike.

And I do believe a good time was had by all.

We hope that this was the first of many wine tastings at the Blue Horse Inn, since we can think of few better ways to spend an evening than with good friends, excellent food, and delicious wines.
